STEVIA BANANA CAKE

INGREDIENTS : 


  • ½ cup canola oil
  • ¾ cup  spoonable stevia
  • 3 very ripe Fair Trade bananas
  • 2 cage free organic eggs
  • 1 tsp vanilla extract
  • 2 cups all purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • ½ cup pecan pieces (optional)
  • 3 tbsp sour cream
  • Cooking spray




METHODS





  1. Preheat oven to 350 degrees F. Spray and flour baking pan. Set aside.

  2. Sift flour, baking soda and salt and set aside

  3. In mixer with paddle attachment, combine oil, spoonable stevia and eggs and vanilla and mix on low until the mix is combined.

  4. Slice bananas and add, mix on low until down to small pieces

  5. Add flour mixture and mix on low again,  do not over mix

  6. Add sour cream and mix again on low for 30 seconds or until the mixture is smooth.

  7. Remove from machine and fold in nuts.

  8. In pan, pour mixture and tap a couple of times on the counter to ensure no air bubbles

  9. Bake for approximately 1 hour or until a skewer or knife comes out clean when inserted. 

  10.  If it starts getting too dark on the top during baking, loosely cover with aluminum foil to prevent it from getting too dark

  11. Let cool completely before removing from pan.
