STEVIA BANANA CAKE
INGREDIENTS :
- ½ cup canola oil
- ¾ cup spoonable stevia
- 3 very ripe Fair Trade bananas
- 2 cage free organic eggs
- 1 tsp vanilla extract
- 2 cups all purpose flour
- 1 tsp salt
- 1 tsp baking soda
- ½ cup pecan pieces (optional)
- 3 tbsp sour cream
- Cooking spray
METHODS
- Preheat oven to 350 degrees F. Spray and flour baking pan. Set aside.
- Sift flour, baking soda and salt and set aside
- In mixer with paddle attachment, combine oil, spoonable stevia and eggs and vanilla and mix on low until the mix is combined.
- Slice bananas and add, mix on low until down to small pieces
- Add flour mixture and mix on low again, do not over mix
- Add sour cream and mix again on low for 30 seconds or until the mixture is smooth.
- Remove from machine and fold in nuts.
- In pan, pour mixture and tap a couple of times on the counter to ensure no air bubbles
- Bake for approximately 1 hour or until a skewer or knife comes out clean when inserted.
- If it starts getting too dark on the top during baking, loosely cover with aluminum foil to prevent it from getting too dark
- Let cool completely before removing from pan.
